Executive Sous Chef

Three Q Catering are currently recruiting an Executive Sous Chef based in Dublin on behalf of our client an established Catering Contractor.

Reporting to Executive Chef you will be responsible for:

• Designing and developing menus in line with quality standards.
• Overseeing the kitchen, ensuring weekly menu preparation, food ordering and stock taking.
• Organisation of Kitchen to ensure effective resourcing and competence to deliver daily menu.
• Management of kitchen staff ensuring adherence to all company policies, procedures and company standards.
• Participation in performance management process in relation to kitchen personnel.
• Management of costs in line with budgetary requirements.
• Food innovation and menu engineering.
• Management of application and adherence to Food Safety Standards in line with legislative and company standards.
• Oversee ongoing  development of  chefs in unit including own personal development.
• Application of safe working in line with health and safety Legislation.

Candidate Requirements:

• Qualified chef with 10+ years experience, with  3- 4 years at  Head Chef level.    
• Experienced 4/5 star high volume hotel / restaurant  / event management  / high end contract catering . 
• Experience in Michelin Star or Bib Gourmand is a positive advantage.
• Wide range of culinary techniques including international cooking styles. 
• High level of enthusiasm and passion for food.   
• Highly motivated individual with demonstrated ability to deliver excellent quality food through a  very competent team of chefs. 
• Takes pride in their work and has high attention to detail and diligent. 
• An astute palet that can  recognise good culinary marriage. 
• Proven leadership and  financial and people management skills.

Salary and Benefits: €40,000-€45,000
